Yes, and it’s not a joke! The secret is liquid nitrogen — an incredible substance with a temperature of almost –196 °C (–321 °F).


If you mix cream, milk, and your favorite toppings, then pour liquid nitrogen over the mixture, it freezes instantly. The result? Delicious, smooth ice cream made right before your eyes!


Why does it work?

At such a low temperature, ingredients cool down in seconds. In a regular freezer, ice crystals have time to grow larger, which makes ice cream harder. But with liquid nitrogen, freezing happens so quickly that the crystals stay tiny — creating especially soft and creamy ice cream.
